My tea for today!

Just thought I’d take a picture of my tea to show what kind of stuff I eat.  It has courgette, tomato, mushrooms, sweet potato, squash and aubergine all on a bed of amaranth, one of the oldest grown grains eaten by the Incas and Aztecs and full of calcium, protein and fibre.
